🥦🍄 Sautéed Mushroom and Broccoli Stir-Fry

🛒 Ingredients:

  • 2 cups broccoli florets

  • 1 tablespoon olive oil (or sesame oil for extra flavor)

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated (optional but adds great flavor)

  • 1 cup sliced mushrooms (shiitake, cremini, or button work well)

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 tablespoon oyster sauce (optional, but adds umami)

  • 1 teaspoon sesame seeds (optional garnish)

  • Salt & pepper, to taste

  • A splash of water or vegetable broth (for steaming broccoli)

🍳 Instructions:

  1. Prep the veggies:

    • Wash and cut broccoli into bite-sized florets.

    • Slice mushrooms thinly and mince the garlic and ginger.

  2. Blanch or pre-steam broccoli (optional for tenderness):

    • Bring a pot of water to a boil, add broccoli, and cook for 1–2 minutes. Drain and set aside.

    • OR microwave the broccoli with a splash of water for 2 minutes covered to soften.

  3. Sauté:

    • Heat oil in a large skillet or wok over medium-high heat.

    • Add garlic (and ginger if using) and sauté for 30 seconds until fragrant.

    • Add mushrooms and cook for 4–5 minutes until they start to brown and release liquid.

    • Toss in the broccoli and stir-fry everything together.

  4. Season:

    • Add soy sauce and oyster sauce (if using). Stir to coat evenly.

    • Add a splash of water if needed to help steam the broccoli and deglaze the pan.

    • Stir-fry for another 2–3 minutes until everything is tender and well-coated.

  5. Finish & Serve:

    • Season with salt, pepper, and a sprinkle of sesame seeds.

    • Serve hot as a side or over rice/noodles for a full meal.
