✅ Ingredients:

  • 2 cups cherry tomatoes, halved (or diced ripe tomatoes)

  • 1 large cucumber, thinly sliced or chopped

  • 1/4 red onion, thinly sliced (or diced if you prefer)

  • 2–3 tbsp olive oil

  • 1 tbsp red wine vinegar (or lemon juice for a citrusy kick)

  • 1–2 tsp fresh herbs (parsley, basil, dill, or a mix)

  • Salt & pepper, to taste

  • Optional: 1/4 cup crumbled feta or mozzarella balls for a little creaminess


🥗 Instructions:

1. Chop & Combine

  • Halve the cherry tomatoes (or dice regular tomatoes).

  • Slice or chop the cucumber. You can peel it if you like — or leave the skin on for extra crunch.
