Ingredients:

4 medium potatoes, peeled and cut into 1-inch cubes

1 onion, chopped

2-3 cloves garlic, minced

1 cup shredded cheddar cheese (optional for cheesy topping)

1 cup chicken broth or cream (for a creamier bake)

2 tbsp olive oil

1 tsp paprika

1 tsp Italian seasoning (or thyme/rosemary)

Salt & pepper to taste

Fresh parsley or green onions for garnish

Instructions:

Preheat Oven to 400°F (200°C).

Season Chicken: Rub with olive oil, paprika, salt, pepper, and Italian seasoning.

Prepare Potatoes: Toss potatoes, onion, and garlic with a bit of olive oil, salt, and pepper.

Layer in Baking Dish:
