🥒🍅 Refreshing Cucumber Tomato Salad
✅ Ingredients:

2 cups cherry tomatoes, halved (or diced ripe tomatoes)

1 large cucumber, thinly sliced or chopped

1/4 red onion, thinly sliced (or diced if you prefer)

2–3 tbsp olive oil

1 tbsp red wine vinegar (or lemon juice for a citrusy kick)

1–2 tsp fresh herbs (parsley, basil, dill, or a mix)

Salt & pepper, to taste

Optional: 1/4 cup crumbled feta or mozzarella balls for a little creaminess
🥗 Instructions:
1. Chop & Combine

Halve the cherry tomatoes (or dice regular tomatoes).

Slice or chop the cucumber. You can peel it if you like — or leave the skin on for extra crunch.

Thinly slice the red onion.

Toss them all into a large bowl.
2. Make the Dressing

In a small bowl or jar, whisk together:

Olive oil

Red wine vinegar or lemon juice

Salt and pepper

Chopped fresh herbs

3. Toss & Chill

Pour the dressing over the veggies.

Gently toss to combine.

Let sit for 10–15 minutes before serving to let the flavors mingle. Even better after 30 minutes in the fridge!
