4 medium potatoes (peeled and cubed)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 cup plain yogurt
½ tsp turmeric
½ tsp red chili powder (adjust to your heat)
1 tsp cumin seeds
Salt to taste
2 tbsp oil or ghee
Fresh cilantro (for garnish)

Instructions:
Boil the potatoes until just tender (not mushy). Drain and set aside.
Heat oil/ghee in a pan. Add cumin seeds and let them crackle.
Add chopped onions and sauté until golden brown. Stir in garlic and cook for a minute.
Add turmeric, red chili powder, and salt. Stir it into the onion-garlic mix.
Lower the heat and add the yogurt slowly, stirring constantly to avoid curdling. Cook for 3–4 minutes until it becomes a smooth, thick sauce.
Add the boiled potatoes to the pan. Stir gently so they’re well coated in the sauce. Simmer for 5–7 minutes on low heat to let everything mingle.
